Gingerbread Bliss Balls with Melrose Walnut & Cashew Spread: Makes approx. 20 balls

(GF, DF, VEGAN)

 

Ingredients:

1 cup medjool dates (pitted)

10 dried apricots

1 cup cashew nuts

1/4 cup Melrose Walnut & Cashew spread

1 1/2 tsp. ginger

1 tsp. cinnamon

1/4 tsp. cloves, ground

1/2 cup desiccated coconut (for rolling, optional)

 

Method:

Place dates, nuts, apricots and walnut & cashew spread in blender and blend until smooth. Add spices and blend again until it begins to bind.

Roll mixture into tablespoon sizes and into balls. Roll in coconut - or leave plain.

Place in fridge for half an hour to firm up. Enjoy!
