Ginger Molasses Cookies: Makes 12 cookies
(GF, DF, VEGAN, PALEO)
150g almond meal
125g Melrose ABC spread
125ml pure maple syrup
20g desiccated coconut
2 tbs. Melrose Organic Molasses
Pinch baking soda
1 1/2 tsp. ginger ground
1/2 tsp. Allspice
Set oven to 180c. Line a large baking tray with baking paper.
Mix all ingredients together well in a large mixing bowl.
Make 12 balls and flatten slightly with the back of a spoon on baking tray (for very round cookies use damp fingers to round and neaten edges before putting cookies in oven).
Cook for 12 minutes. Leave to cool.
Cookies will be chewy on the inside and a little crunchy on the edges. Enjoy!
