Raw Vegan Christmas Puddings: Makes 8 small puddings
(GF, DF, VEGAN, PALEO)
70g dried figs
50g Melrose Organic Golden Flaxmeal
2 tbs. orange zest
1 tsp. grated fresh ginger
100g dried apricots
180g almond meal
1 tsp. vanilla extract
1/2 tsp. allspice
1 tsp. cinnamon
1/4 tsp. nutmeg
3 tbs. orange juice
1 tbs. Melrose Organic Unrefined Coconut oil (melted)
1 cup coconut cream
2 cups fresh blueberries
2 cups fresh strawberries
Line 8 50ml capacity tins or ramekins with plastic wrap.
Blend all pudding ingredients together in a blender until sticky.
With your hands, form a ball and then divide into 8 small tins.
Press the pudding mixture into the tins making sure you have an even top (which will be the pudding base) and place in fridge for two hours to set.
To serve, take puddings out of fridge and pull out of tins and peel off plastic wrap. Place on bowls or serving platter, dollop on coconut cream and lots of berries. Enjoy!
Note: To make thick coconut cream, simply leave a tin of coconut cream upside down in the fridge overnight. Open and scrape out the coconut cream, leaving the remaining liquid.
