Balsamic Strawberries with Goats Cheese

Serves 2



1 cup Melrose Organic Balsamic Vinegar

1 tsp. honey

1 round sourdough roll, sliced into 6 or so slices

4 strawberries (sliced finely)

60g goats cheese

1/2 bunch fresh mint (chopped finely - and keep some leaves for serving)



  1. In a small saucepan simmer the balsamic vinegar and honey, stirring occasionally for 10 - 15 mins until reduced. Allow to cool.
  2. Toast slices of sourdough and top with goats cheese and strawberries.
  3. Drizzle over the balsamic reduction and scatter on the fresh mint. (You can keep left-over balsamic reduction in the fridge).
  4. Enjoy!
