Balsamic Strawberries with Goats Cheese

1 cup Melrose Organic Balsamic Vinegar
1 tsp. honey
1 round sourdough roll, sliced into 6 or so slices
4 strawberries (sliced finely)
60g goats cheese
1/2 bunch fresh mint (chopped finely - and keep some leaves for serving)
- In a small saucepan simmer the balsamic vinegar and honey, stirring occasionally for 10 - 15 mins until reduced. Allow to cool.
- Toast slices of sourdough and top with goats cheese and strawberries.
- Drizzle over the balsamic reduction and scatter on the fresh mint. (You can keep left-over balsamic reduction in the fridge).
