Chocolate Coconut Superfood Balls

(GF, DF, VEGAN)


Ingredients

1 heaping cup walnuts/cashews or other nuts of your choice (ground)

½ cup Melrose Organic Golden Flax Meal

1 tbsp. Melrose Organic Unhulled Tahini

1 tbsp. Melrose Organic Unrefined Coconut oil (melted)

½ cup coconut flakes (crushed by hand)

1 tbsp. raw cacao powder

7 medjool dates (soaked until soft)

*Add 1 tbsp. of maple syrup for extra sweetness

Coconut flakes & sesame seeds for coating

 

Method

  1. Combine ground nuts, flax meal, coconut flakes, cacao powder into a bowl
  2. Mix through coconut oil and tahini
  3. Add soaked dates and use your hands to break them apart
  4. Press the mixture and combine well to form a sticky consistency
  5. Roll into small balls
  6. Coat with your favourite topping (coconut flakes, sesame seeds, chia seeds)
